做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上(shàng )锅盖焖。
