做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少(shǎo )量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候(hòu )加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
