做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸(jìn )泡(pào ),生姜(jiāng )切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅(guō )盖焖。
