做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
