做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖(gài )上锅盖焖(mèn )。
