做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上(shàng )锅盖(gài )焖。
