做法:春笋(sǔn )切成片后(hòu )加(jiā )少许(xǔ )盐捞(lāo )出后用(yòng )清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
