做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出(chū )后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加(jiā )入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
