做法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
