做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖(mèn )。
