做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖(mèn )。
