做(zuò )法(fǎ ):春笋切成片(piàn )后(hòu )加少(shǎo )许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀(yún )稍收汁时盖上(shàng )锅盖焖(mèn )。
