做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快(kuài )熬干(gàn )的时(shí )候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
