做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
