做法:春笋切(qiē )成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
