做法:春笋切成片后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖(gài )焖。
