做法:春笋切成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生(shēng )抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后(hòu )转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
