做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
