做法(fǎ ):春(chūn )笋切成片(piàn )后(hòu )加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
