做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
