做(zuò )法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
