做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的(de )时(shí )候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖(mèn )。
