做法(fǎ ):春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
