做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
