做法:春笋(sǔn )切成片后(hòu )加少许盐捞(lāo )出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
