做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
