做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清(qīng )水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅(guō )盖焖。
