做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀(yún )稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
