做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
