做法:春笋(sǔn )切成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
