做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
