做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火(huǒ )煮(zhǔ )开后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖(mèn )。
