做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅(guō )盖焖。
