做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖(mèn )。
