做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖(gài )焖。
