做法:春笋切成片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段(duàn )。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
