做法:春(chūn )笋切成(chéng )片后加(jiā )少(shǎo )许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
