做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入(rù )少量清水半掩住(zhù )春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
