做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖上锅盖(gài )焖。
