做法:春笋切成片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的(de )时候(hòu )加入盐(yán ),翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖。
