做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
