做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住(zhù )春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖(gài )焖。
