做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
