做法:春笋切(qiē )成片后(hòu )加少(shǎo )许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
