做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加(jiā )入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上(shàng )锅盖焖。
