做法:春笋切成片(piàn )后加少许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
