做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大(dà )火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
