做法:春笋(sǔn )切成片(piàn )后加少(shǎo )许盐(yán )捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
