做法:春笋切成(chéng )片后加(jiā )少许盐捞出后(hòu )用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽(chōu )、老(lǎo )抽(chōu )、蚝(háo )油(yóu )翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
