做(zuò )法:春笋切(qiē )成片后加少许(xǔ )盐捞(lāo )出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春(chūn )笋,盖上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
